Lemon Curd Pies
Pineapple Lime Spritzer
Mini Lemon Curd Pies
- 2 2 lemons, juice of
- 1 Lemon rind
- 4 Egg yolks
Baking & Spices
- 6 tbsp Cornstarch
- 1 tsp Salt
- 2 cup Sugar
- 1 tbsp Butter
- 2 cup Water
Put pie crust into an oven for 10 minutes at 375 degrees.
Mix the water, sugar, lemon juice, lemon rinds, salt and cornstarch together in a medium (or large) saucepan. STIR OCCASIONALLY so it will not stick to bottom of the pan.
Bring to a boil on medium-high heat.
*It should start getting thick after stirring for awhile*
Once it is think let it rest off the heat.
Once the crust comes out of the oven put the curd into the crust and put bake for another 5 minutes.
Once out of the oven let cool and enjoy!
Pineapple Lime Seltzer
- 1/2 cup Club Soda
- 1/3 cup Pineapple Lime mixer
- Crushed Ice
Start by picking your glass. I picked a mason jar.
Add your ice to a little bit more than half way.
Add the soda and mixer.
Pick out a straw and mix.
Go outside and enjoy your refreshing beverage while enjoying your mini pies.
